Flaky Biscuits

g Cake flour 2 tbsp Baking powder 1/4 tsp Baking soda 1/4 tsp Salt
55 g Cold margarine, diced 175 ml Buttermilk, low fat 1.
Preheat oven to 230C/450F/Gas Mark 8. 2. In a medium mixing bowl combine
flour, baking powder, baking soda, and salt. Cut in margarine with a pastry blender
until lumps are pea-sized or smaller. Stir in buttermilk with a fork. Press dough
into a ball. 3. On a lightly floured surface roll dough into a 6 x 10"
(about 15x25cm) rectangle. Fold in short ends to meet in the center. Fold dough
in half so it is four layers thick. Roll dough into 6" (about 15cm) square.
4. With a floured knife cut into 12 squares. Place 1 1/2" (about 4cm)
apart on an ungreased baking sheet. Bake 10 -12 minutes, until lightly browned. Each
